A really simple and quick dessert idea using Blue Diamond Chocolate Almond Milk is to add
*1.5 cups to a saucepan on a low heat
    *2 tablespoons vegan corn flour

Using a whisk continuously stir the mixture over the heat until this liquid thickens.
Once at a pudding-like consistency place in a glass or dessert bowl & top with sliced almonds, goji berries & carob nibs.

    Perfect Hot or Cold.

I am always looking for healthy ways to make my favourite desserts. I have always loved panna cotta, so here is a recipe for a delicious almond milk panna cotta.

    Almond Milk Panna Cotta
    Ingredients

    1 Cup sweetened almond milk
    1/2 Cup powdered soy milk
1/2 Teaspoon agar agar (vegetarian gelatine substitute)
    1 Teaspoon vanilla
1 Passion Fruit and fresh berries to serve

    Instructions

In a pot bring to a boil the almond milk and add the soy milk stirring constantly. Mix in the agar agar and boil for 1 more minute so the agar will set. Remove from the heat and add the vanilla, mixing well. Pour the mixture into cups or glasses and cover them with plastic wrap. Place in refrigerator for a couple of hours to set. Before serving, top with some fresh passion fruit and berries. Enjoy!!

I love making vegan cheese! Just add 3/4 cup of almond breeze milk, 1 cup of soaked almonds, 2 tbs of olive oil, 3 tbs of lemon juice, 1 clove of garlic and a pinch of salt into a blender and there you have a beautiful creamy cheese for lasagne, vegetable bake, etc.
Ooo, I also love making sorbets with it! In a blender just add 1/2 cup of almond milk and around 2 cups of frozen berries and blend! There you have a beautiful and sweet dessert 😀

I love using almond milk in a lot of recipes. Smoothies, which has already been mentioned, is a particular favourite of mine. I find almond milk tastes so much nicer that soy milk, oat or rice milk. I also like using almond milk in desserts. While decadent, honey and almond semifredo is to die for and a great occasional treat.

Instead of using oats for porridge I use quinoa and almond milk with a bag of chai tea and sprinkle of cinnamon whilst it’s cooking. Serve with a smattering of sliced almonds and mint and you have yourself a DELICIOUS breakfast! 😀

    “Mexicocoa”

    1 tbsp unsweetened cocoa powder
    1/4 tsp cinnamon powder
    Pinch of chilli powder
    Pinch of cayenne pepper
    190ml almond milk, unsweetened
    1 tbsp honey

    How to make Mexicocoa

In a saucepan over low heat add the cocoa powder, cayenne pepper, cinnamon powder and chilli powder. Toast until spices begin to release their aromas, about a couple of minutes. Using a small whisk or wooden spoon, slowly incorporate the almond milk.

Raise the temperature to medium-high and bring to a slow simmer. Stir in the honey and remove from the heat.

Rim a mug by dipping into a saucer of water, blotting and dipping into a saucer of paprika. Pour in tequila. Add hot cocoa mixture. Stir with a cinnamon stick and serve.

The simplest things are often the best; especially in this case. Porridge using almond milk. And if you’re really feeling like something that little bit special some almond slices, chopped up dates or figs and a drizzle of honey goes a long way. A truly great way to start your day.

  25. Rich, decadent, creamy chocolate mousse.

Yep. Definitely, my favourite and a regular recipe whipped up in my kitchen.

My version uses avocados whizzed up with unsweetened Almond Breeze, agave syrup and carob powder. You can alternate the sweetener (to honey, sugar, stevia) and the carob (cocoa), but my recipe is GLUTEN-FREE, DAIRY-FREE and VEGAN!
Here are some pics to drool over….

    http://www.forkingdiana.com/2011/12/happy-new-years-eve.html

    2 small ripe Hass avocados
1/4 cup of agave syrup (or other sweetener of choice)
    1 tsp of vanilla extract
1/4 cup of carob powder (or cocoa, but you may need to adjust the sweetness)
1/2 cup of Unsweetened Almond Breeze

    1. In a food processor add all the ingredients and blend until smooth, remember to scrape down the sides
    2. Taste. Add more agave or carob if needed. The consistency should be quite thick, but will firm up when refrigerated. To adjust consistency add more carob or milk.
    3. Set mousse in containers of glasses for at least 3 hours before serving.

This is more nutritionally beneficial than ‘normal’ mousse so this is a better alternative. Also the unsweetened almond milk bumps down the calories compared to cream/full fat dairy mousses.

Hope you give it a try. You can use it as a pie filling, spread it on rice cakes, stir into yogurt or like me…. eat it right out of the food processor with a spatular :-/

  26. Tayla says:

I love love love almond milk by Almond Breeze it beats any other brand! I drink it as I’m lactose intolerant and because i absolutely love the taste of it! It hands down beats any other milk because i both enjoy it and its nutrition content makes me feel like I’m doing the right thing for my body. I drink chocolate almond breeze straight from the carton (I have to refrain myself from finishing it all off in one sitting), I steam the chocolate almond breeze for a healthy hot choc and make sure it always accompanies me when I’m enjoying one of my baked treats! Everything I bake with I substitute the milk for unsweetened almond breeze (sometimes the chocolate almond breeze to fulfill my chocolate cravings) and it exceeds the job! There’s an endless amount of recipes I have included almond breeze unsweetened almond milk into but my favourite is making pancakes for breakfast where I put a couple of table spoons of almond meal (I think I have an almond obsession), one scoop of protein, one egg, half a mashed banana and a good splash of almond milk until it is a batter consistency. Pan fry and enjoy with some Greek yoghurt, berries, peanut butter, honey… The list goes on! I also recently made a yummy clean yoghurt-banana-dark choc chip cake that I featured on my Instagram (tayboing) which was another day when baking I used almond breeze as a milk substitute. My choc almond breeze and a slice of my cake was a match made in heaven!! Anyway, almond breeze, you rock and keep doing what you’re doing 😉 xxx

  27. Gillian says:

Oh wow! I love almond milk! I have so many allergies and almond milk lets me enjoy ‘normal foods”!!!

My favourite thing to do is a Almond Milk -Vanilla Baked French Toast

Use slightly stale bread and cover the bottom of a dish with it. Whisk together 4 eggs, 2 egg whites, 1 3/4 cups almond milk, tsp vanilla & almond extracts, salt, and 4 tablespoons of sugar until eggs are broken up. Pour over bread and let soak, turning halfway through, until bread is thoroughly moistened and has absorbed most of the custard, at least 30 minutes

Then just bake at about 180 for about 20 minutes! You can sprinkle sugar and almonds on the top also to give it a nice crunch!
